DARK CHOCOLATE CANDY CANE COOKIES

INGREDIENTS
- 1/4 cup Dutch-processed cocoa powder
- 1/4 cup black cocoa powder
- 1 teaspoon baking soda
- 1 cup light-brown sugar packaged
- 2 eggs room temperature
- 1 teaspoon peppermint extract optional
- 1 tote Bright White Chocolate Melts or white chocolate, melted*
- Vegetable shortening as necessary to candy melts
- Crushed candy canes
INSTRUCTIONS
- In a medium bowlwhisk flour, cocoa powders, baking soda, and salt together. Put aside.
- From the bowl of a stand mixer, beat sugar and butter on med-high until soft and light (approx. 2-3mins). Reduce speed and add peppermint and egg extract. Beat until well blended. Add flour mixture and blend until blended.
- Preheat oven and line baking sheets.
- Utilizing a moderate cookie scoop, part bread on baking sheet (I'd 9 biscuits per sheet). Bake for about 10 mins, or till the centre is set. Cookies crinkle and will deflate somewhat .
- Cool on pans for 5 mins then move into a wire rack to cool completely.
- Pour melted candy melts or chocolate, then put on a parchment lined baking sheet and sprinkle with crushed candy canes. Let me set.
