Chocolate Braided Swirl Bread (Babka)





Ingredients

Two 1/4 tsp yeast

  1. 1 tsp salt
  2. 1 1/2 tsp vanilla
  3. 1 egg
  4. 2 egg yolks
  5. 10 tablespoons butter
  6. 1/2 cup sugar (100 gram )
  7. 1 tbsp ground cinnamon
  8. 1 egg wash

Planning

  1. Blend milk and the yeast and let sit about 5 minutes, until foamy.
  2. In large bowl, then add sugar, egg yolk, vanilla, the egg, and honey and whisk to blend.
  3. Add in the yeast and milk mixture and whisk until incorporated.
  4. Add the flour and blend until incorporated.
  5. Add the butter and mix until incorporated.
  6. Cover with a towel and let rest.
  7. Bring the dough out and knead until smooth.
  8. Split the dough and put in bowls and then cover each with plastic wrap. Allow the dough sit at room temperature for at least 2 hours, or if it's doubled in size.
  9. For the chocolate sauce, combine butter, chocolate, sugar, cocoa powder, cinnamon, espresso beans, and turbinado sugar in a medium sized mixing bowl and microwave. Stir to blend and set aside.
  10. Move to a floured work surface, When the dough has doubled in size and roll the two parts of dough to a rectangle.
  11. Cover the dough with half a cup the chocolate sauce inch - 1 inch of space on either side.
  12. Roll up the dough and repeat with next slice of sauce and dough.
  13. In half making sure the seam is side down, Employing a knife or a bench scraper cut each log.
  14. Lay 1 piece of dough and put another bit over it so you've got a tough'plus sign'.

  21. Transfer the bread and brush with egg wash.
  22. Bake for 35-45 minutes, until browned and cooked through.
